What the World Needs Now is Love, Sweet Love

A Special Valentine’s Day Treat 001 (2)

Happy Valentine’s Day!  One of the sweetest days of the year!  I don’t have a card or a project to share with you today.  But I do have a wonderful recipe for the most delicious, buttery Valentine’s Day treat ever!  If your family is anything like mine, they’ll be as happy with a cookie as they would be with a card.  These yummy shortbread cookies are quick to put together, the dough is a dream to work with and dipped in chocolate…ooh-la-la!  Love sweet love indeed!

Valentine Shortbread Cookies

2 cups softened butter (4 sticks, one pound…hey, it’s Valentine’s Day….live a little!)

1 cup confectioner’s sugar

4 cups all purpose flour

2 cups quick cooking oats (see, they’re healthy!)

2 teaspoons real vanilla extract

1/2 tsp almond extract

1/2 tsp. salt

1/2 pound semi sweet chocolate (I used Ghiradelli semi sweet chips)

1 tablespoon of coconut oil

Heath Toffee Chips (optional, but I recommend it!)

In a large mixing bowl, cream together the butter and confectioner’s sugar until well blended.  Add flour, oats, salt and extracts.  Mix well,

Roll dough out onto a lightly floured surface to a thickness of 1/4 “.  Cut into heart shapes.  Place on parchment lined baking sheet and bake in a 350 degree oven for 12-15 minutes.  While cookies are in the oven, prep the chocolate by placing the chips in a heat-proof bowl over simmering water, stirring until completely melted.

While cookies are still a little warm, dip one half into the chocolate and sprinkle with toffee chips.  Chill in refrigerator to set the chocolate.

Makes 3 1/2 dozen.

A Valentine Treat from Sophie and Julia

I just have to share the darling Valentine’s present my sweet Sophie made for me. 022 (2) 023 (2) She said, “Tell Nana she can put her pens in it.”  She has seen me search my desk for a writing implement. What a sweetheart!  One of the best Valentines I’ve ever received!

And a Valentine Treat for Gramps, too!024

She asked her dad, “Gramps like shoes, doesn’t he?”  Well, Gramps loves this sweet little pink tennis shoe!  Inside it says, We make a perfect pair.  Yes, they do!

Wishing you lots and lots of love, sweet love today and every day!  Don’t forget….you only have until noon EST to comment for a chance to win my yummy blog candy.  I’m adding a secret surprise today…but I promise you’ll love it!  You can find all the details for the blog candy in this post.

Here’s wishing you a Valentine’s Day that’s filled with love, sweet love!

Sophie says, ” Nanny if you loose your pencils just find ’em and put them in the can!” and about Gramps’ shoe, “it’s NOT real.”
    Love you!

Mmmmm shortbread… I do love me some shortbread cookies. Any day. Any time. Mmmmhmmm, yes I do.
The Valentine gifts from Sophie and Julia made me say, “Aaaaaaawww” (a li’l vocal lift on the end there) at my computer screen. I think that’s enough cuteness/sweetness to last me a whole day! 🙂

Oh, Oh, Oh – I can’t wait to make these – something I can actually make and have all of the right pieces and parts to do so – no searching for a craft store today – thank you, thank you!

Sophie and I must have some of the same through processes. I am making a pen holder as well (repurpose, reuse, recycle), I began working on it yesterday. It’s similar in color and design. How funny is that?!

Happy Valentine’s Day and thanks for the sweet recipe….mmmm

You crack me up! Of course those oats offset that pound of butter! I will buy that!
